Winemaker Andy Erickson’s notes on the 2019 EMMAUS Cabernet Sauvignon:
“The 2019 vintage is defined by energy. The combination of ample tannin, mouthwatering acidity, and aromatic brightness in the wines, as well as a heightened concentration, sets them apart from previous vintages. The 2019 Emmaus Cabernet Sauvignon is no exception—the wine exhibits an impressive depth, while showcasing the entire spectrum of Cabernet Sauvignon descriptors that Coombsville has to offer. Our north-east facing steep hillside vineyard thrived in this near perfect growing season. Perched toward the morning sun, and protected from the afternoon heat, the vines were able to fully ripen without compromise. Organic farming helped to enrich the soils and bring more biodiversity to the vineyard. This certainly reflects positively in the wine.
This 100% Cabernet Sauvignon is pure Coombsville. Dark, opaque and dense, it gives off a fragrance that is complex and alluring: raspberry, pencil shavings, licorice, cherry blossom and loam. There is an interesting contrast between the black-purple color and the bright red aroma profile. While the wine is somewhat inward right now, with decanting it opens beautifully, and over the years it will certainly become more overtly expressive and generous. It will easily age for two or more decades in the bottle.”
